Tuna with Roasted Beats and Goats Cheese


A perfectly filling lunch salad packed with protein, fiber, and flavor!

Ingredients:

1 can tuna in water
1 Tbsp fat free Greek yogurt
1 tsp Dijon mustard
Black pepper
3/4 cup Kale
3/4 cup Spinach
1/4 avocado
2 small roasted red beats
1 oz goat cheese
2 Tbsp low fat vinaigrette of choice (I used a homemade orange juice herb vinaigrette)

1. Mix tuna with Greek yogurt, Dijon mustard, and pepper.  Set aside.
2. Mix spinach and kale in a small bowl.  Scoop tuna mix into the center.
3. Top salad with sliced beats, avocado, goat cheese, and dressing.

*1 veggie, 1 dairy, 1 fat, 1 condiment



Balsamic Tangerine


A tangy and sweet salad that nicely compliments a steak or fish dinner.

Ingredients:

1 1/2 cups kale
1/4 avocado
2 Tbsp chopped green onion
.5 oz fat free feta cheese
1 small tangerine (cutie)
2 Tbsp Low Fat Balsamic Vinaigrette (p90x recipe)

Combine all ingredients in a salad bowl and enjoy!

*1 vegetable, 1 fat, 1/2 fruit, 1/2 dairy
